Tyler's-at-Grad-school meal of the week 4


Before I get to the meal, I have to share these aMazing Muffins that I made for Mothering Matters :)

Spiced Pumpkin Streusel Muffins
2 boxes spiced cake mix
1 can of pumpkin

streusel (optional):
1/4 c sugar
a few shakes of cinnamon
1/4 c flour
1/4 stick butter

you could also add some type of choc chip, vanilla chip (YUMMMMY!) to give it a little boost of flavor!

A hint I learned was that how the batter looks is how the muffins turn out- they don't plump much either- so smooth out the top!!

Here's a secret...
These muffins are weight watchers (don't tell! they don't tast like it!!)

this recipe makes 4 dozen and costs $4.00 that's about $.10 cents a muffin!



Today's meal while Tyler's done is JUST delicious. So far i'm 4 for 4 for loving the recipes i'm trying! ha!

Blue cheese pepper and zucchini salad.

1/2 cup lettuce
handful of croutons
1 T blue cheese sprinkles
1 T diced peppers (grilled)
1/2 diced zucchini (grilled)
ranch dressing
shredded chicken
1/2 piece of turkey bacon
salt and pepper to taste

SO good!!

Fall

It's officially fall,
- I have a super yummy spiced pumpkin candle burning in my kitchen.
- I made kettle corn. (super easy... GREAT recipe)
- Roman and I bought pumpkins :)
- Roman and I made a wreath for the front door yesterday (for $4.00!!).
- AND the weather is amazing- it just smells like football!

The only thing thats missing is the smell of harvest (you lucky Nebraskans!! enjoy that smell!)

7 months

On Sunday Roman turned 7 months old!

-He's crawling faster then I can keep up.
-He crawls all around the house and even bear crawls on the tile (i think it hurst his knees)
-He's talking all the time (baby talk)
-He eats cereal and applesauce for breakfast then takes a nap from about 10-11 then takes another nap around 1/2 for about 1-2 hours and then is awake till we go to bed!
-He's wearing size 3 diapers
-He has two teeth on the bottom
-He always smiles
-He's 19.5 lbs
-He's 29 inches long
-He's in the 70%tile
-He LOVEs outside
- He LOVEs people
-He LOVEs Kauzie
-He'll stand at our tv table all day. He wants to walk and will even try, but will fall.
-He plays and teases Kauzie. When kauzie licks him he thinks that's really funny and laughs big.
-He's all boy- he'll spit his cereal out and laugh.
-He's curious about everything
-He loves reading books
-We still bounce to sleep on the ball.
-He still sleeps with us in our bed.

first siloam football game

Last night Tyler, Roman and I attended Roman's first panther football game! And boy was it the game to go to! SO exciting! Siloam won against greenwood- first time in 23 years (a man told us that at walmart after the game :)

It was fun watching Ty carry Rome, introducing him to everyone that he knew. Rome was pretty chill. Just watching everything. We got our pop, popcorn, and a hot dog and went to find seats. We sat in the middle of the stands and all of a sudden Rome started crying. It was the cry that he does when he meets someone new. He didn't know what was going on. It occurred to me that this was his first time in a place like this. The stands were packed and the people were loud. All we had to do was let Rome look at us, and we smiled and talked to him. As soon as he realized that it was ok he was fine. And I think he enjoyed it.

The last quarter he started to get tired so we ended up walking the fence, he got in a real great mood then! he could see and talk to people- his little heaven :)

It was fun watching him get excited when we'd stand up and cheer because the panthers made a touch down and it was fun watching him look at the crazy parents who were yelling in anger because of bad call.

It was a good night- a fun memory. It was fun to bring Roman to the place where 5 years ago I met his daddy :)

Spending time with Grandma Kelly

They say that grandbabies are spoiled- and that did indeed happen to Roman while we were in Nebraska, but I must say, I was a little spoiled myself :) It was so freeing to have someone else around to watch Roman through out the day. Mom was quick to volunteer to watch, change, play, and just be with Roman. It allowed for me to shower when I wanted, to go get ready for the day without having to watch Rome the entire time. She too let me cook whenever and whatever while she watched Rome. He got used to her in no time, she was putting him to sleep (a hard task!), taking him out to move the sprinklers. Often I would look around for them and they would be reading a book, swinging on the porch swing, or playing on the floor with some baby toys. It was so relaxing to be home!

Tyler's-at-Grad-school meal of the week 3


Last night was grad school thursday dinner :)

I made a super yummy dish!
It's called Grilled Zucchini Greek Salad.

Ingredients:
1 zucchini
2 medium Roma diced
1/4 cup olives, diced
1/4 cup crumbled feta cheese (or less)
olive oil, to brush on zucchini
salt and pepper to taste
1 T + 2 T vinaigrette dressing

1. cut zucchini in 4 pieces and brush with olive oil and salt and pepper
2. grill until lines are seen
3. add the rest of the ingredients and mix!
yummmmmmy! SO good!

Isaac's football game and homecoming

On Friday night of my Nebraska adventure, Shelb, Roman, and I rolled in to Central City for the game a little before 7. We were both super tired from the long day, but excited too for seeing all the alumni back for the game. As soon as we were out of the car the talking began! there was SO many people there that I hadn't seen in years! It was also my 5 year high school reunion. I was asked to plan a little something and to try and get a hold of my whole class. It was fun! we had NINE people there! I was amazed that so many came! it was fun to see everyone! It seems like yesterday that I was a student there, it was weird to walk the field with my BABY! ha! I showed him off like crazy- even told him where i stood when i was a cheerleader (he didn't seem to care much! ha!)

It was added fun that my little brother Isaac was playing- he did GREAT! it was fun to look out on the field and see this confident guy out there :) he even let us take pics with him after the game! ha!

Staying at the Swanson's

On Thursday and Friday, Roman and I went to my sister Shelby's place in Kearney. Mom took us over and watched Rome while Shelb took my the Y where she works out ALLLLLL the time. She had told me a while back that they had zoomba (a latin dance workout) and I told her that we SO had to try it!! she reluctantly said she'd go with me :) Shelb, is like a super athletic and very fit girl, she usually does an hour long cycling class during the same time zoomba is, so she gave up her hard workout for the easy one for me :) It was a blast- we laughed the entire time! It wasn't exactly our cup of tea :)

Then on Friday we got to go visit her work and meet her co workers. So fun! Mike left for a wrestling retreat with his new team at UNK.

We wrapped up the day by going shopping and hitting up a consignment sale. We headed over to central city for the homecoming game after that (more in ike's upcoming entry!)

Seeing the new combine with Papa Terry

On Thursday of our trip home to NE, we got to spend some time with dad. He hauled corn in the morning and about noon came in for lunch. We were able to have a good talk about life, farming, and things that were new this year. After Roman's nap we got to get a great tour of Grandpa Terry's new combine- for all you city people a combine is what is used to pick the corn and to take it off the cob during harvest. It was fun to see it and to take a quick ride in it!! It was Roman's first time in a combine!!

Visiting Jay's class

During our time in NE, Roman and I got to go visit Jaydon's class. We made some scotcheroos and went to his class for the last 10 min of school. It was a quick visit of talking and treats and then we went to the wrestling room to take some pics on the mat. It was fun to be back and see the school!!

We're BAAAAAAACK!!


wow- an 18 day absence from blogging! I think that's my longest yet! Thanks for the patience! I have about 10 entries in the makings, so hang tight there's gonna be lots of info!

Here's a quick recap of what we've been up to for the last 3 weeks...
Roman and I were able to go up to NE for a great LONG visit! We went for 10 days! (pics and stories coming soon!)

As for the last 3 weeks, Roman has completely changed as a baby-- he's growing up!

-He's crawling everywhere. I thought life would be easier but when I turn around for just a second he's sped off to another room or getting into something!

- He's crawling to the furniture or walls and standing up! he's getting really good at this- he also forgets he can't walk and he lets go of what he's hanging on to and will take a step and then come crashing down. (at the DR today, our Doc said that he never sees this in boys this young- he said it's common for boys to start standing and walking later on and that normal is usually after 1 year. He said from what he sees in Rome, he says he may be walking by 8 months!! WOW!!)

- He has two teeth on the bottom and his gum's are getting swollen on top!

- He's eating breakfast- cereal and apple juice, every morning

- He's doing two naps- 1 in the am and 1 mid afternoon (completely different then 4-5 just a couple weeks ago!)

- He's in a new car seat and actually puts up with the car now! traveling to and from NE has made him SUCH a good traveler- he doesn't love it but he'll tolerate it! (oh fun story about this carseat- it's 150 at walmart but i found it on target's website for 115 and i showed them in the check out line through my phone and they matched the price!! WOOO HOO!!)

Tyler's-at-Grad-school meal of the week 2


So today was a wonderful day! It did not drag on and on like last Thursday did. Don't get me wrong I would have LOVED for Ty to be able to come home earlier but we got a lot done today!

A highlight would be going to Rissa's for the afternoon. We got Roman's 6 month pics taken and we got a little time for visiting. I think that just broke up my day so well! we also went to walmart after so that I could get a couple things for my dinner.

I researched all morning for a yummy recipe to try for tonight. But I knew that at 5 at walmart if i wasn't that hungry I probably wasn't going to get a good hunger up at all-so I decided to go for another salad. (if you don't know me well, I LIVE on salad. I've even made a breakfast salad before with eggs and toast. I know it's weird but I LOVE LOVE LOVE them!) So this one was going to be a treat.

I made a blue cheese and grilled pear salad. It was divine!

Ingredients:
1/4 pear
10 grapes
1 piece of turkey bacon
1 cup chopped iceberg lettuce
4 thin triscuits
1/2 roma tomato
1 T blue cheese crumbles
the same dressing from last Thursday
I figured it to be right at around 200 calories. (yeah for healthy!)

I grilled the pear and tomato. YUMMMMMMY

I just assembled it together and had warm tomatoes and pears on it. It was so good.
